From old warehouses to new, from proper ventilation to perfect temperature ranges, building science plays an important role in making the perfect barrel of bourbon. Much can be learned from this age-old process of storing and aging bourbon that was used before mechanical systems and energy consumption ruled the building comfort universe. And with that, maybe some old lessons can be distilled for tomorrow’s buildings.
